How to prepare Amala

  • Bring 2 cups of water to a rolling boil per 1 cup of elubo flour.
  • Gradually pour in the flour whilst stirring vigorously with a wooden turner to prevent lumps.
  • Reduce heat, cover the pot, and steam for 2 minutes.
  • Uncover and stir again until smooth, dark brown, and elastic in consistency.
  • Serve hot, shaped into balls, alongside ewedu, gbegiri, okra, or your preferred Nigerian soup.

No — they are completely different products. Elubo is made from dried yam peel/skin and produces dark brown Amala. Pounded Yam flour (Poundo Iyan) is made from the white flesh of whole yam tubers and produces white, stretchy Iyan. Amala and Iyan are different swallows traditionally served with different soups.

What gives Amala its dark brown colour?

The characteristic dark colour comes from the yam peel and skin used to make Elubo. The outer layer of the yam tuber, when dried and ground, retains the natural dark pigmentation — this is what distinguishes Amala from the white Iyan made from yam flesh flour.

Excellent design, size and function, plus they have CLEAR PLASTIC TOPS so you can easily see how much ground salt or pepper you have to sprinkle on your food. After using my first set I knew I needed another set for different combinations of pepper corns in particular. Here's my recommendation for use. First, use quality coarse salt and whole pepper corns. Second, don't grind with lid off over hot steaming food while cooking because the steam will negatively effects the salt and pepper in the grinders, the grind quality you get, and will ultimately clog the grinders. Just grind with lid on until you get the required amount (hence the need for the clear caps), open the caps and sprinkle. Easy peasy... ☺
