Spanish Roja Garlic is a renowned Rocambole hardneck variety cherished for its bold, complex flavor and historical significance. With rich brownish-red cloves wrapped in streaked outer skins ranging from cream to deep purple, each bulb contains 8–12 easy-to-peel cloves. This heirloom garlic offers a rich, spicy kick balanced by subtle sweetness—perfect for everything from raw salsas to slow-roasted entrées.

This variety thrives in cooler climates and is traditionally fall-planted, maturing by midsummer. Spanish Roja Garlic is known for its dependable yields, graceful growth habit, and large bulb size—typically over 2 inches in diameter. Gardeners appreciate its straightforward cultivation and culinary versatility, making it a staple among serious garlic growers and gourmet chefs.

Whether you're growing it for your kitchen, your market stand, or your pantry, this variety delivers an unmatched garlic experience. • Rocambole Hardneck Garlic.

  • 8–12 large, brownish-red easy-to-peel cloves per bulb.
  • Bulbs average 2" and larger; approximately 6–8 bulbs per pound.

  • Performs best in fertile, well-drained soil with consistent moisture.

Flavor and Aroma Profile

  • Flavor Profile: This garlic delivers a classic, rich garlic flavor with spicy depth and subtle sweet undertones. It shines when roasted or sautéed, adding bold intensity to sauces, marinades, and roasted dishes. The heat mellows with cooking, leaving behind a warm, savory richness that elevates any recipe.

  • Aroma Profile: Spanish Roja Garlic offers a powerful, earthy fragrance with hints of spice. Crushed or chopped, the cloves release a robust aroma that intensifies as it cooks. Its strong, enticing scent adds depth to everything from salad dressings to hearty stews, making it a standout in the kitchen.

Planting Time

It is typically planted in the fall for a summer harvest, similar to other hardneck garlic varieties. Planting in the fall allows the cloves to establish roots before winter sets in, leading to healthier plants and larger bulbs.

Scaping

Hardneck garlic varieties like this garlic produce scapes, curly flower stalks that emerge from the center of the plant. While the scapes are edible and delicious, their removal redirects energy to bulb development, resulting in larger cloves. Harvest scapes when they curl once or twice and use them in culinary dishes like pesto or stir-fries.

Storage and Preservation

How to Store Fresh Garlic

Once harvested in early to midsummer, allow the green stalks to completely dry and turn brown to ensure the garlic is fully cured. For best results, hang the hardneck bulbs in a cool, dry, and airy location to promote proper curing and preserve their bold flavor and nutrients. This type of garlic keeps well for several months, making it an excellent choice for both fresh and roasted dishes.

Preserving Garlic for Long-Term Use

To extend the shelf life of this garlic, harvest when the foliage has fully browned and the bulbs have reached maturity. Cure them in a dry, breezy location to retain their aromatic flavor and beneficial compounds. With its smooth texture and well-balanced taste, this garlic variety enhances everything from sauces to roasted vegetables, while holding its freshness in long-term storage.

Best Practices for Drying and Freezing

Freezing garlic after it has been properly cured is an effective way to extend its shelf life while maintaining its rich flavor and quality. Depending on your future use, you can freeze it in several forms—whole bulbs, individual cloves (peeled or with skins), or even minced. Although it’s possible to freeze garlic right after harvest without curing, it’s usually not advised. High moisture levels in uncured garlic can cause a soft or mushy texture once thawed, and the flavor may not be as robust.

Great value for the price, highly recommend
Color: Dogwood & Calming, Size: Medium
Our dog loves these and chews them down to nothing. They are a great value for the money and the use your dog gets out of them. The size is just right for our doberdor.

Our dog loves it but it wasn’t durable enough to last
Color: Dogwood Jack, Size: Large, Color: Dogwood Jack, Size: Large
Our lab took to it as soon as we gave it to her. Perfect size for our 80 lb yellow lab. However, now that it’s in about 10 days, she’s able to break off chunks from this bone that are dime size or larger, and we have to throw it away

No problems after a year and a half
Color: Dogwood & Calming, Size: Medium
Have been regularly buying these for my corgi for about a year and a half. The 2 pack lasts about a month or 2 each time. Pieces break off in small enough pieces that they safely pass through his digestive system. He gnaws each one down to about 1/4 the original size before we take it away and give him a new one. He continues to have regular bowel movements and has a healthy appetite so I can’t imagine any problems arising after so long. I have tried other alternatives and every other similar chew breaks off in larger pieces and didn’t feel comfortable letting him chew/eat them. I noticed there are a few 1 star reviews saying their dogs got sick off these but after a year and a half I have had 0 issues with this product. I guess it depends on the dog and how big of pieces they are swallowing. My dog ingests pieces about the size of a grain of rice so just pay attention and you should be fine.

Long lasting and safer alternative to sticks
Color: Dogwood & Calming, Size: Medium
These are great, very durable, and have lasted a very long time. Much safer for my dogs than the random sticks they find in the yard. They do get shorter with chewing eventually, but they don't break off in little chunks like I've seen with some nylon chews, and they don't splinter like wood. Medium size works well for both my 16 lb Cavalier and my 60 lb Pyrenees/Golden mix. They're both moderate-to-aggressive chewers, though size obviously affects how much damage they can do. I wish you could buy the hemp chew separately because that one is very much a favorite in my house, so after 2 years and 2 purchases, I have barely any left of the remaining hemp chew, but still 2 of the dogwood chews that neither dog is as interested in anymore. I'd love to buy a couple more of just the hemp one.

Your dog will thank you.
Color: Dogwood & Fresh Breath, Size: Large
My dogs loves to chew on these. They make a small mess but not as bad as other chews. They are food for keeping teeth clean.
