Barrell Craft Spirits' Ice Wine Cask Finish Bourbon is a complex and innovative expression that blends the sweetness and acidity of ice wine with the richness of expertly selected bourbons. Originating from Kentucky, Indiana, Tennessee, and Wyoming, this blend incorporates a range of aged bourbons. The barrels were carefully chosen to balance the bourbon's boldness with the delicate influence of the ice wine casks, creating a vibrant yet rich drinking experience. With a derived mash bill of 71% corn, 24% rye, 4% malted barley, and 1% wheat, the bourbon has an ABV of 53.26%.
On the nose, floral and fruity aromas like fresh flowers, strawberry, and melon blend seamlessly with richer notes of white chocolate, honey toast, and ginger. The palate is both sweet and savory, coating the mouth with flavors of honey, golden raisin, apricot, and toasted baguette, followed by hints of white chocolate, coconut, and affogato.
